Three suggestions to try:

1) Think small in terms of lighting. Try using a small table lamp, a flashlight or a similar source. This will reduce the likelihood of washout.
2) Use a white mouse pad so you’ll get maximum reflected light from your small source.
3) Think in terms of multiple shots, each one set up to show the mouse and mouse performance at its best. You can edit these into a seamless demonstration of the mouse.
