Mac Pro, it is much faster and can be more of an editing beast. Whereas iMacs are meant to be workstation computers.

Alex is correct–the Mac Pro is a great editor. But it's also very high-end–expect to pay about $10K to get it completely set up.
I use a 27" iMac for my editing work, with 16GB RAM and 2GB on the video card. It works quite nicely, and I've got about $2,500 tied up in it.
So it comes down to the same old sond-and-dance: How much money ya got?
