I'm shooting a video at 720 P and 60 frames per second and we will be changing the frame rate in post to utilize a slow motion effect. Given that the final product will not be 60 frames per second, do I need to stay with the standard of using the shutter speed number that is double the frame rate, or 1/1 25th of a second?

I can't speak on this personally because I don't have experience with it myself, but I would guess the same rule applies. If you are really worried about it couldn't you experiment a little bit using the setup your speaking of and see how it turns out? Best of luck!
