In need of equipment

Have an Azden shotgun with XLR fitting and Beachtek adaptor. Whenever I use the shotgun I make sure to set the adaptor to mono so I record on both channels.

I’m kinda confused about microphones…I own a GL2 camcorder and I’m looking into buying an Azden SGM-2X…but I’ve heard that shotgun mics will only record in mono. I’m confused…could someone clarify? What all would I have to buy in order to make it work?
