The camera is sure to change as the lighting situation changes. This is noticable and functional for run and gun shoots like "cops". Not to say that you can't get some good shooting done with some controlled lighting and experimentation. Usually the auto white balance needs a few seconds to adjust after a lighting change, so standby before a call to action. Check your manufacturer's manual for a any additional info such as a possible "hold" function that allows for manual overide of of the auto white balance function. That would then allow you to zoom in on white, let the camera balance itself, then press "hold."
