First off (am I'm sure you realize) it's going to take an extremely large amount of tape if you want to film the whole thing, but the biggest concern is that it's going to take a HUGE amount of HDD space, probably more than you want to spend the $$ on.
I recommend shooting it in several key sequences as it is developed, maybe a chunk of footage ( X amount of tapes/footage per story that is constructed, etc). I'd expect that you want to show this whole construction in a short period of time by speeding it up. I'd recommend you still do that, but perhaps just seem each sequence together with short dissolves. This will seem them nicely together and give the audience the feeling of time. Simple techniques often are the best ones. Dissolves are amazing cheap effects :)
