HD conversions

    I just recently got a Canon Vixia G10 camera.  Although not a novice to video editing, the solid state Canon files have me perplexed.  I use a Mac Pro with Final Cut Express.  I know that the Mac cannot import the clips directly into the program and that the files must be converted before they are used.  I've explored and sampled programs from Wondershare, Dormisoft and Aiseesoft.  All seem to work similarly however, they give you several options like mp4, mov and avi just to name a few.  So, if I record the video in HD, what does the conversion do to my files?  Are they still HD or do the convert to some lower resolution format?
