The lighting may be a major factor. If you are having problems in the church, take the camera outside and shoot the same color/subject. If the outdoor shot looks good, your indoor lighting is the culprit. Brightness and color temperature of the indoor lighting could be improved by replacing the lites with a higher tech bulb. You can install CFL bulbs with a daylight color temp rating. The wattage can be increased three fold by using the CFLs without overloading the lighting circuit.
